SUPERFOOD: Sweet Potato

SUPERFOODS: Sweet Potatoes

July brings us the sweet potato as this month’s SUPERFOOD. Did you know that sweet potatoes and yams are not the same food, and they each contain different nutrients?

As with other bright orange vegetables, sweet potatoes provide beta carotene, along with vitamin C, calcium, iron and fiber. Also, one sweet potato provides a whole day’s supply of vitamin A. To maximize nutrients, choose sweet potatoes that are dark orange; and, look for firm sweet potatoes that have smooth skin, free of cracks and soft spots.

Nebraska City Micro Market

A Step Into the Future

In collaboration with VVS, Cargill in Nebraska City recently converted it’s cafeteria to a full line Avenue C. Avenue C is VVS’ newest concept that provides fresh, healthy options in an open market layout.  Customers enter the Micro Market and choose from options, such as refreshing hot and cold drinks, pre-packaged fresh foods, various snacks of all varieties and sizes, and then pay for the product at an unmanned kiosk using a pre-loaded Avenue C card or a credit/debit card.  Through Avenue C, VVS is providing all shifts with great products and equal options!

Tammy Benton Graduation

Ms. Benton Receives Degree

Tammy Benton, Site Manager at VVS’ Tyson Amarillo cafeteria, recently received her AAS in Food Service Management. Ms. Benton has always wanted a college education.  She attained her goal while working full time and caring for her family – “setting a good example” – in the process.  Ms. Benton attended classes online, at night, on weekends, and, as she puts it, “did whatever was necessary to attend the class that I needed to take.”  When asked about any memorable moments, Ms. Benton said, “Walking down the aisle!”

VVS’ District Managers and the Procurement Team took a trip to the Windy City in May to attend the National Restaurant Association Show. This show helps us do both by helping us understand what is new from our suppliers that will help us continue to reach our goals.”
